I'm back from vacation and getting back into the swing of things (work, cold weather, snow...sigh). I promise I'll do a "vacation in review" post sometime this week.
Now, onto the food.
Ed made the dish above (Sweet Breakfast Quinoa) a couple weeks ago, and I had high hopes for it - primarily that it'd be delicious, easy, and could enter my breakfast rotation (toast, oatmeal, eggs).
Unfortunately, the dish ended up being a bit too labor intensive for 6AM on a weekday (even with prep work the evening before) and therefore is relegated to a (delicious, nutty, and healthy) weekend breakfast treat.
