Golden Beet Salad with Wheat Berries and Pumpkin Seed Vinaigrette


This recipe (find it here) is definitely not a recipe you want to try and whip up after work on a weekday.

It is time intensive: 1hr to cook the wheat berries, another 1hr 20mins to roast the beets.

However, the end result is worth all the time and effort.  The beets are sweet and earthy, the wheat berries firm but tender, and the nutty dressing is delicious.  If you make this dish on a Sunday afternoon, you'll have leftovers for lunch for days.
