Dear readers,
I fully realize the dish above (Grilled Baby Octopus w/Roasted Red Peppers and Potatoes) kinda' looks like something an alien might eat or the little octopi may remind you of spiders (shiver).
However, once you get over the baby octopus thing, the dish is fantastic. After simmering in olive oil and a quick grill - the octopus has the texture of tender chicken, and the potato/red pepper salad is the perfect accompaniment.
If you want to trim a few minutes off your prep time, use roasted red peppers in a jar instead of roasting your own. Also - if you can't find baby octopus at your regular grocery store, try an Asian market. We picked ours up at Lam's (which I wrote about in the post below).
I'll pass. I cannot eat baby octopus.
